Food Pairings: Pairs well with a wide range of cuisine, from lighter fish dishes, such as sushi, to heavier meat dishes. The aroma is higly volatile and therefore heating this sake is not recommended. Serve Chilled.

Tasting Notes: This sake is brewed to bring out the softness of the water. Shizuoka yeast brings out good flavor while the 1801 yeast makes the sake aromatic. It has a good balance between flavor and aroma, while softly textured.

Pairs well with sushi, fish dishes and meat dishes. This is a popular and affordable sake.

Brewery: Fujinishiki Sake Brewery
Founded: 1688

Profile: Fujinishiki brewery is located in Fujimomiya city, at the southern foot of Mt. Fuji in Shizuoka prefecture. It is family owned since it's founding in 1688 and is currently operated by the 18th generation. Fujinishiki have always used ground water from Mt. Fuji which is protected by bedrock from an ancient eruption. The name Fujinishiki came from Yukio Ozaki , Mayor of Tokyo known for donating the cherry blossom trees to Washington D.C. Mayor Ozaki visited the brewery in 1914 and described the red leaves of Mt. Fuji as a rich brocade (nishiki).
