Senkin Classic Kamenoo

Senkin Classic Kamenoo

Class: Junmai Daiginjo

Rice: Kamenoo

Rice-Polishing Ratio: Koji 40% / Kakemai 50%

Brewery Location: Tochigi prefecture

Food Pairings: White fish escabeche, spring vegetables cooked in bouillon, basil spaghetti, seafood salad, cold steamed chicken, vermicelli salad, shrimp shumai, sea urchin dishes, oyster hotpot, pork stir fried with miso, salmon grilled with butter, shirako with ponzu, bean curd skin dishes, oysters, dressed ark shell

Tasting Notes: Kame No O is one of the few pure strains of Sakamai left in Japan; most varietals are crossbreeds, and this rarity fell out of use with the rise of Gohyakumangoku due to it's difficulty to farm. This Sake displays well-balanced flavors and rich aromatics supported by a strong mineral backbone. There is a touch of delicate fruit on the palate married to a cascading brightness which spreads through the palate. The brewery encourages drinkers to sip their sake out of Bordeaux wine glasses to truly discover the sensory potential of their brews.
