Tasting Notes: Having been coaxed out of retirement (now for the second time), this fascinating one-of-a-kind brew has been hand-picked by the master himself as the best of Noguchi Naohiko's new generations of sake. Having made it with all the passion and wisdom of 70 years of sake brewing, and thoroughly maintaining conditions for it's aging for approximately one year, production is limited to only 5,500 bottles. It is a matter of course that the ingredients and technique that contribute to this bottle are the best of the best, but to communicate this care and quality in the character of each glass is nothing short of amazing - the sake has a beautiful and mellow aroma of stone fruit and berries, with a well-layered evolution of flavors like mandarin orange, bosc pear, black currant, fuji apple and white peach with a focused and dry and mineral finish.

Profile: About 70 years of pursuit of sake brewing, this sake brewery was established by Naohiko Noguchi who is the brewery of Japan's greatest, known as "God of sake brewing," as the culmination of the sake brewing life. The sake brewery, which opened in November 2017, was named as a mission to study the craftsman's technique, spirit, and way of life in the sake brewing, and pass it on to the next generation.
