Tasting Notes: This limited production bottling's refined and elegant aromas and deep flavor are thanks to the brewery's special Yume Sansui sake rice - a local varietal of Aichi prefecture - which Sonnoh Shuzo has grown under contract in Oku Mikawa. This sake rice is difficult to polish and breaks easily when polished to under 50% remaining, but Sonnoh Shuzo's slow and careful method pushes the limits of rice polishing, and the 22% polishing ratio rewards them luxurious rice and fruit flavors that reverberate throughout the palate and enhance any meal.

Profile: Sake is a product of the climate, just like all other creations. The Hazu district of Nishio City, Aichi Prefecture, which is an area designated as Mikawa-wan Quasi-National Park, overlooks small islands such as Maeshima and Okishima floating on the horizon and is called Seto Inland Sea in Tokai area for its varied topography and great natural beauty. Sonnoh Shuzo is a dedicated sake brewery that has devoted all its time and effort to sake production in this place ever since its foundation. Their diverse portfolio of sake is a combination of pure water and clear air nurtured by Hazu’s rich nature and their original sake brewing knowledge, and they have been highly regarded among sake retailers and consumers.
