Genzo and the Brewery’s Features
Genzo, the founder, who reputed to be a master swordsman, started the brewery beside “the Chikugo River ”. Genzo had so progressive a spirit that he invented a new brewing method and contributed to this area.
The company continually challenges itself to create innovative types of sake while preserving traditional craftsmanship. With a commitment to delivering fresh surprises and excitement to customers, it develops differentiated and unique products, such as Japanese sake brewed with Black Koji and Japan's first jelly-like plum liqueur, crafted using proprietary technology. The distinctive Black Koji sake has gained popularity in Europe, ranking as the second-best-selling brand among the company’s German clients, following a well-known competitor. Experience the unique flavors of these exceptional creations.
Tasting Notes
A rare treat for the adventurous, Kuro Kabuto is brewed using Black Koji instead of the usual Yellow Koji, contributing to a very unique and interesting flavor profile. The brewers forego the usual carbon filtration, allowing the natural qualities nurtured during brewing to remain, and send it straight to bottling for cold storage. It has a ripe strawberry field nose and a full body. Its flavor zips around the palate with a puckering, fruitlike acidity, refreshing the senses and engaging the mind.
