This wine was first crafted in 2008, reflecting head viticulturalist and winemaker Ayana Misawa’s vision of a structured, dry rosé in Japan. Its composition varies by vintage, typically blending Merlot, Cabernet Sauvignon, and Cabernet Franc from Misawa Vineyard, farmed without herbicides or chemical fertilizers. Grapes are fermented in small lots using both direct press and saignée methods; the exact proportions vary by vintage and are undisclosed. The entire lot is aged for six months in seasoned French oak barrels (3–5 years old), enhancing both varietal complexity and sense of place. It shows a bright salmon hue with firm viscosity. Aromas of blood orange, redcurrant, cowberry, and cherry are layered with thyme and rosemary. The palate is complex and refined, with exotic spice, concentrated structure from low yields, and vibrant acidity typical of cooler regions. The finish is long, fresh, and deep.
