Tasting Notes
This wine was born in 2008, from the desire of head viticulturalist and winemaker, Ayana Misawa, to make a dry rosé with structure in Japan. The varietal composition changes from year to year, Merlot, Cabernet Sauvignon, and Cabernet Franc grown at the Misawa Vineyard without herbicides or chemical fertilizers applied are separated into small lots and are fermented separately by direct press and the Saignée method, followed by maturation in old French oak barrels. By doing so, the wine expresses both the complexity of the varietal characters and the sense of place. Bright salmon, firm viscosity. First impressions on the nose are rich fruit notes such as blood orange, redcurrant, cowberry and cherries and floral notes of thyme and rosemary. On the palate, the wine is complex, with exotic spices expanding on the palate. Refined, yet the concentrated flavors from low-yields reveal as structure, and the acidity typical of cooler regions give tension on the palate. This rosé wine has a long finish, combining freshness and depth.
