The Kakumei “Crane’s Call” series is positioned as a premium line within Senkin’s “Edo Return” concept. This special bottling revives the spirit of Genroku-era brewing methods from the Edo period in a modern form. By employing a traditional high-koji brewing technique, a larger proportion of koji is used than usual, drawing out the rice’s umami and sweetness to their fullest extent. In addition, a high-sugar fermentation approach creates a rich sweetness and deep, layered body, offering a luxurious tasting experience. Built around clarity and elegance, it features a refined, aromatic bouquet of pear and white flowers. The palate is soft and juicy, with an outstanding balance of sweetness and acidity.
