Edo-gaeri. A new modern revival, where everything has transformed into kimoto-style brewing, uniting all expressions of modern sake. ※ Brewed with a traditional kimoto starter, no additives, using subterranean water from the Kinu River. The kimoto method weaves together aromas reminiscent of La France pears and melon, with a soft and light finish that isn't overpowered by the alcohol. The aroma also includes notes of muscat, lychee, and a wine-like character similar to Sauvignon Blanc, characterized by the presence of 4MMP.
