Established in 1830 with the motto of "quality first". Brewing sake is making rice. Not only do they focus on obtaining high quality sake rice, they dedicate time and effort in their labs to increase said rice's quality. Their efforts do not stop there however - in order to help preserve the environment, they implement the ISO14000 system of environmental sustainability, and also participate in various activities to preserve their natural surroundings. Additionally, they hold tea ceremonies, concerts, and cultural events for the local community. The goal is to make a fun, sustainable, and ultimately enjoyable environment with sake.

Tucked away the depths of Niigata, one of Japan’s premier rice-growing regions., our brewery is enveloped by far-reaching rice fields, rivers and untouched woodlands. Our flagship brand Kubota is a reflection of this and offers a taste of the four seasons: cherry blossoms in spring, fireflies in summer, vibrant red maple trees in autumn and gentle blankets of snow in winter. We also work closely with the local community to nurture cultural and natural environments both near the brewery and further afield, to ensure we can brew our sake with pride.

This edition of Kubota Manju is characterized by three key factors: the sake rice, the rice polishing method, and the original "YX" yeast. The “Gohyakumangoku” rice used in this sake comes from the local Koshiji Region of Nagaoka City in Niigata Prefecture, with the brewery involved in the cultivation process of the rice as well. The sake rice is then polished in house down to a ratio of 40% using the original shape (genkei) polishing method. Finally, the sake is brewed with "YX" yeast, an original brewery-developed yeast cultivated over many years. This results in a dynamic, multi-layered, and elegant nose with a deep, mellow flavor. As expected of a Niigata sake, the finish is clean and crisp. This limited edition of Kubota Manjyu is a beautiful addition when celebrating various milestone birthdays, weddings and other significant events in your life.
