Established in 1660 in Miwa, Nara, known as the resting place of god of sake, Mimurosugi has been brewing for more than 350 years. They are devoted to the "god of sake" and "god of brewing" and brewing for Omiwa Shrine, Japan's oldest shrine. The brewery's slogan is "to drink Miwa". They use water from their wells in the brewery which draws ground water from the sacred Mt. Miwa. The rice used is grown with the same water by specially contracted farms.

Philosophy and Craftmanship

Imanishi brewery’s brewing philosophy is: "Pure and Honest Sake Brewing."
Pure: To express the pristine clarity unique to Miwa.
Honest: To do only what is right and proper in the process of making sake.

As sake is a matter of personal taste, they believe it's up to the drinker to decide whether it is delicious or not.
What they, as brewers, focus on is whether every step of the process is done correctly—that is their sole standard of judgment.
From carrying ingredients by hand to avoid contamination and prevent damaging the rice, to washing the rice in small batches to ensure every grain is properly polished—they maintain an unwavering commitment to quality throughout their brewing practices.

Characteristics and Originality

The concept is "Drinking Miwa." The brewing water comes from the sacred underground spring of Mount Miwa, drawn from a well within the brewery.
The rice is grown together with their partner farmers along the same water vein that feeds this sacred spring.
They feel immense pride and joy to be able to brew sake in one of the most sacred places for sake in the world, and will continue to craft sake that expresses the essence of Miwa.
