The Omachi Way
Founded in 1688, Muromachi Shuzo is the oldest sake brewery in the Okayama prefecture. The brewery exclusively utilizes Omachi rice, a unique and pure rice strain indigenous to Japan, known as the ancestor of renowned sake rice varieties like Yamada Nishiki and Gohyakumangoku. Growing Omachi rice is notoriously difficult due to its sensitivity to chemical fertilizers, earning it the nickname “maboroshi” or “phantom rice” because it can easily vanish if not meticulously cared for. Despite this, Muromachi Shuzo remains committed to using only local Omachi rice, making the brewery truly exceptional. Additionally, Muromachi draws from local Omachi spring water, recognized as one of the top water sources by the Japanese Ministry of Environment for its pristine quality. The combination of this water and the delicate Omachi rice imparts a soft texture and rich flavor to Muromachi sake.
Tasting Notes
Using the rare Omachi rice, and the Omachi no Hiyamizu water, Muromachi would like to present their Junmai Daiginjo Genshu (undiluted). Has a fruity, floral aroma and deep umami.
