MIO CRISP is a refreshing sparkling sake with pretty aromas of honeydew melon, lemon, sweet cream, watermelon, almond, and daffodil. It has a light creamy mouthfeel with flavors that balance tangy fruit and savory notes: zesty stone fruit, melon, tangerine, vanilla, Asian pear, and wet stone.

Food Pairings: Drink MIO CRISP on its own anytime or with a celebratory toast on special occasions. It pairs nicely with light appetizers, such as prosciutto, savory custard tarts, and mild white cheese. It works well with many gently savory main courses, such as poached chicken, scallops, crab, lobster, and mushroom pizza with white sauce. For dessert, a fresh fruit plate or pound cake will be lovely.

This Junmai sake offers an excellent balance between fruity and savory characteristics. The nuanced nose includes notes of salted Asian pear, sweet custard, orange creamsicle, subtle banana, and jasmine. The gently mouthwatering palate has a creamy mouthfeel and very fine, silky texture with flavors of melon, vanilla, banana and cream. The finish is very long and savory with cocoa nib, salty plantain, and crushed-rock mineral flavors. At room temperature, this sake is even more savory and a minty flavor appears too.

As a result of the exacting methods of the Kimoto process, this Junmai sake presents a robust body and highly nuanced flavors. When served warm, as it has traditionally been served, its innately earthy and fruity notes of apple, creamy cheese, and spice emerge. Chilling is equally recommended, as it will present lighter, delicately nuanced aromas of vanilla, flowers, stone fruit, melon and sweet milk.

It has a full-bodied palate with a hint of sweetness and a smooth, velvety mouthfeel. On the nose, the sake gives off subtle aromas of pear, melon, banana and petrichor, with flavors of vanilla, melon, banana and white mushroom, enhanced by a hint of sweetness. Though traditionally chilled, this particular Junmai Daiginjo can also be warmed, retaining its balance and heightened creaminess, and gaining a stronger umami profile. Savory notes of rice, cream of wheat, and ripe banana also emerge.

Tasting Notes
This sake is brewed using the Kimoto method-one of Japan’s most traditional and laborintensive brewing techniques-and aged for seven years in a specialized temperature aging room. Since no charcoal filtration is used, the original flavor and umami of the Kimoto Junmai are beautifully preserved. Elegant umami, soft acidity, and a mellow character result from slow, low-temperature maturation in Himurogura. When chilled, it reveals exquisite aromas of white peach and yellow apple; at room temperature, notes of cantaloupe, banana bread, and floral tones emerge.
