SHO CHIKU BAI Ginjo
Type: Junmai Ginjo / Premium

Ginjo is a special reserve connoisseur class of sake. Most sakes are brewed with rice that has been milled 30%. For our Ginjo we use rice that is polished over 50%. Additionally, we use a special strain of yeast that allows for fermentation at a cooler temperature. The result of the slower, longer process is a silky-smooth, rich texture and a fruity flavor.

Sho Chiku Bai Rei
Type: Junmai Daiginjo

Rei presents a hint of white flowres, cantaloupe, and honeydew melon. In the mouth, it is smooth and lightly creamy with a savory component that comes further forward as the sake warms gradually in the glass. The delightful fruit and floral notes of this daiginjo make it a delicious all-occasion drink moreso than a typical daiginjo sake, as the soft and full body character of REI Junmai Daigijo opens it to a wider variety of food pairing.

Sho Chiku Bai Kyoto Junmai
Type: Junmai

This is a very refined sake with flavors and aromas that are subtle and soothing. It's wonderful near a warm fireplace in the evening after a long day on the ski slopes. Subtle aromas reminiscent of French vanilla ice cream and cardamom lead into a soft, creamy palate with silky texture and flavors of lightly seasoned cream of wheat and honeydew. At room temperature, baking spice aromas and flavors become prominent and the palate is even creamier.

Sho Chiku Bai Gokai Junmai
Type: Junmai

This convenient, single-serve sake offers traditioanl junmai aromas of Asian pear, salted melon, banana, and cream. The silky palate has a satisfying weight and is gently mouthwatering. Flavors include fruity notes from the nose-pear, melon and banana-but also wonderfully savory aspects, including custard, cocoa, banana bread, and baking spices. The palate becomes more intense and rich in umami. Flacors include salty dried beef and banana bread with walnuts.
