Facing the sea of Tosa where whales swim, Kochi Prefecture is rich in seafood. They make Sake with the concept of “Liquor matched to the dishes under the Tosa food culture.” The gentle fragrance but a firm, crisp finish, and a light acidity bring out the deliciousness of the dish. Junmai is the main product, so that there are variety of Junmai - Junmai Daiginjo type using Junmai character.

Tasting Notes
This citrus liqueur contains 35% fruit juice, made with an indulgent blend of two types of citrus—Tosa buntan, a specialty of Kochi Prefecture, as the main ingredient, and yuzu—along with Suigei’s premium sake. Using their sake, known for its refined umami and clean finish, as the base, the liqueur is packed with the rich flavors of citrus. The refreshing, juicy sweet-sourness of the buntan, complemented by the supporting notes of yuzu, spreads smoothly across the palate. Combined with the soft, rounded taste produced by Suigei’s sake—crafted with a focus on being an ideal sake to enjoy with food—this liqueur offers a fresh, smooth, and well-balanced flavor profile.

A dry style of hiyaoroshi, with a gentle nutty quality. While rice driven on the palate, its gently aromatic by really opens up with a bit of heat. Nice at multiple temperatures, umami driven on the finish so pretty flexible in what it can be paired with.

With a refreshing sweet aroma and an exquisite tart flavor, this sake based liqueur electrifies the palate with a juicy citrus burst. Suigei Brewery's home Kochi prefecture is a major producer of citrus, and boasts the highest production volume in Japan. Suigei's citrus liqueur incorporates 39% fruit juice; a blend of Yuzu citrus, Konatsu citrus, and Naoshichi citrus (a type of sudachi). The concentrated flavor makes this an excellent addition to dishes or cocktails, but the brewery also recommends enjoying Kaju 39 chilled, on the rocks, and mixed with sparkling water or hot water depending on the season and occasion.

Made using the finest sake rice in Japan, Hyogo Prefecture's Special A district Yamada Nishiki, polished down to a 30% polishing ratio. By using two types of yeast, Suigei achieves the fragrant ginjo aroma characteristic of daiginjo and the crisp finish unique to junmai. In the sake pressing process, only the most aromatic and flavorful part, the "nakadori", is specially extracted and stored fresh to capture the freshly brewed taste. This results in a wonderful sake with a brilliant and profound Ginjo aroma and a mellow flavor, worthy of being Suigei's finest Junmai Daiginjo.
