HAKKAISAN BREWERY
Brewery: Hakkaisan Brewery Co., Ltd.
Founded: 1922
Founded in 1922, Hakkaisan Brewery is situated at the foot of Mount Hakkai in Niigata. The spring water that flows from the mountain is used to produce its sake. The guiding principles of the brewery are to produce the finest sake that people will never tire of, to apply the highest standards of production to all its sakes, and in order to achieve the smooth wonderfully pure and mellow flavors of Hakkaisan sake, the Brewery insists on producing in small batches, using hand-made koji and slow fermentation at low temperatures.
NIIGATA
Mountain Hakkaisan
Founded in 1922, Hakkaiwan Brewery is situated at the food of sacred Mt. Hakkaisan, meaning ‘eight peaked mountain’, in Niigata, Japan. The region is famous for its deep winter snowfalls which sometimes reach over 10 feet (3 meters).
Hakkaisan’s brewing water starts as pure snow and after being lightly filtered by the mountain soil, springs forth at the base of Hakkaisan Mountain. This soft, pure water from Hakkaisan’s dedicated stream is used in all aspects of production, and is central to the unique quality and taste of Hakkaisan sake.
Hakkaisan’s guiding principle is to produce sake of the highest quality that pairs well with food. The brewery uses only hand-made koji rice crafted in-house, and also brews sake in small batches with a focus on slow fermentation at low temperatures. The result is a well-balanced clean and dry sake style called tanrei karakuchi, featuring a smooth texture, an elegant umami flavor, and a crisp finish. Hakkaisan’s sake is perfect to serve chilled or warm, and pairs well with both Japanese food and the cuisines of the world.

Ohoro means “to continue” in the language of the Ainu, the indigenous people of Hokkaido. Niseko Distillery hopes the gin crafted in Niseko, Hokkaido, will be enjoyed by many for generations to come. Made using Hokkaido-grown sweet gale and Japanese mint as the botanicals and the high-quality subterranean water (soft water) of Niseko Annupuri. The result is a clear, smooth, yet robust flavor with a light citrus aroma that makes an excellent base for cocktails. Absolutely sublime neat, with beautiful nuances of yuzu, chamomile, and coriander. Recommended for Gin & Tonic, White Lady, Gimlet, and Martini cocktails.
